Thailand is well known for incredible street foods. Here is an authentic adaptation of Thai flavors featuring Simplot SeasonedCRISP® Savory Battered Straight Cut Fries.

Sriracha 3/4 cup
Mayonnaise 1 1/2 cups
Lime juice 1 Tbsp.
Simplot SeasonedCRISP® Delivery+®: Savory Battered Straight Cut Fries, Skin On 3/8" 2.5 lbs. 5 cups
Fish sauce 1/2 fl. oz. 1 1/4 tsp.
Garlic powder 6 gm. 1 1/4 tsp.
Coriander, ground 6 gm. 1 1/4 tsp.
Table salt 6 gm. 1 1/4 tsp.
Cheddar cheese, shredded 10 oz. 2 1/2 cups
Monterey Jack cheese, shredded 6.5 oz. 1 2/3 cups
Cilantro, chopped 1.6 oz. 1 1/2 cups
Dry roasted peanuts, chopped 8 oz. 1 1/2 cups
Scallions, thinly sliced 2.75 oz. 3/4 cup
Limes, cut into wedges as needed
Preparation Instructions:
Step 1
Preheat broiler.
Step 2
In a small bowl, whisk together Sriracha, mayonnaise and lime juice. Reserve.
Step 3
Prepare fries according to package directions. Toss freshly cooked fries with fish sauce, garlic powder, coriander and salt.
Step 4
Spread half of the seasoned fries onto a sheet pan. Cover with half of the cheeses. Top with remaining fries and then cover with remaining cheeses. Broil on high until cheese is melted and bubbly.
Step 5
Top fries with cilantro, peanuts, scallions, avocado and Sriracha mayonnaise. Serve with lime wedges.
